It all started with apple trees. Not industrial orchards, but old, resilient Baltic apple trees that have been growing in our garden and forest edges for decades. These trees are not perfectly shaped – they are wild, free, and full of character, just like our cider.

We are Herbsts – a small, independent cidery surrounded by old apple trees, wild berries, and local herbs. Our cider is natural, free of sulfites, and fermented with wild yeast, letting nature do its work. Nothing extra—just the pure taste of apples, forest, and wind.

We believe that great cider starts in nature, which is why we forage – searching for wild apples, berries, and herbs that give our cider its unique character. And we believe that Baltic cider deserves a place in the world, alongside Normandy, Asturias, and Somerset.

We call it Wild Baltic Cider – wild, natural, and uncompromising. 🍏
